Nicaraguan cuisine is a blend of Creole, Native American, and Spanish influences that follows the origins of its people. Like in many Central American countries, corn is a basic food, and it is used to make many recipes for both main dishes and beverages.

Typical Dishes

The "gallo pintado" or Gallo Pinto is the national typical dish, based on two very common ingredients from Central America: white rice and red beans. It is a mixture that, after cooking and frying, results in a unique combination of flavors and textures.

This two-tone dish is enjoyed at any time of the day, whether at breakfast, lunch, or dinner. It is often accompanied by scrambled eggs and fresh cheese that has also been fried.

Homemade "tostones"—fried plantain rings—are frequently added as a side.

Nacatamales are a masa of corn filled with pork or chicken meat, served with yuca, and wrapped in a plantain leaf to be steamed.

The plantain leaf gives all the flavor to this very nutritious dish, which is also very commonly consumed across the country. They are found everywhere and are often sold directly from homes where they are prepared on weekends.

Vigorón is a typical dish from Granada, where you can find the best specialists. With a strong vinegar flavor, it is a small salad of cabbage and carrots, accompanied by chicharrón and your choice of meat, such as beef or pork.

Pupusas are a style of small pancake made from masa and the filling of your choice.

Quesillo, which is a corn tortilla with cheese and pickled onions, fried or grilled, can be topped with grilled beef or chicken, served with plantains or fries and grilled maize, and seasoned with a little salt and butter to enjoy while walking through the streets and avenues of Nicaragua.

Further along the coast, ceviche is also very common. This dish is made of fish marinated in lime, cilantro, onions, and tomatoes. In Corn Island, lobsters and prawns are sold in abundance; fresh fish are part of the daily fare in the Nicaraguan coastal area.

Typical Drinks

Commonly called "frescos," these are natural fruit juices made fresh to order. The fruits are chopped and mixed, with a little water added, and everything is poured into a small plastic bag that can be carried and drunk anywhere.

The most common are hibiscus drinks made from hibiscus flower, with a beetroot color, very tasty with or without sugar, and typical Granada herbal teas infused and mixed with water.

Corn-based atoles are also widely consumed, especially in the morning or evening, preferably served hot.

There are two types of national beer: Toña, with a strong and tasty flavor, and a lighter one, both locally brewed in Nicaragua.

However, the national drink of Nicaraguans is white or amber rum, especially Flor de Caña, the internationally renowned national brand. The distillery can be visited in León, with tastings and guided tours available.
