Cheese Curd Soup
Ingredients
1 pound of Corn dough
1 pound of Cheese curd
4 Eggs
3 Onions
3 Ripe tomatoes
2 Chiltomas (green chili peppers)
½ liter of Oil
1 Achiote
Preparation
Step 1 : First, wash the onion, tomato, and chiltoma with cold water.
Step 2 : Then, cook the corn and grind it until reaching a dough consistency, which is reserved for later use.
Step 3 : Next, mix the corn dough with the cheese curd.
Step 4 : Cut the onion, tomato, and chiltoma into squares and mix with beaten eggs.
Step 5 : Then, combine the corn and cheese curd mixture with the onion, chiltoma, tomato, and egg mixture.
Step 6 : To make the dumplings, use a large spoon to form them and fry in hot oil.
Step 7 : For the soup, use a little of the prepared dough from the dumplings.
Step 8 : Cut the tomato and onion into cubes and add to the soup.
Step 9 : When the soup starts to boil for about 25 minutes, add the previously fried dumplings and turn off the heat.
Step 10 : Serve the soup hot and garnish with cilantro.
Step 11 : Finally, a pinch of achiote can be added to give the soup color.
