Chicken and Meatball Soup
Ingredients
1 ½ kilogram of Chicken pieces
2 Eggs
4 Corn
2 Chayotes
4 Tomatoes
4 Pieces of yuca
2 Green bananas
3 Garlic
2 Onions
2 Sweet peppers
1 Cilantro branch
¼ tablespoon of Ground oregano
4 Sour oranges
1 tablespoon of Annatto
1 pinch of Salt
½ kilogram of Corn dough
1 Shredded breast
½ Onion
½ Chili
3 Bouquet garni herbs
1 tablespoon of Annatto
Salt and butter
1 pinch of Pepper
Preparation
Step 1 : To prepare the broth, start by washing the chicken and cutting it into pieces.
Step 2 : Then, place in a pot over medium heat with salt to taste, annatto, garlic, onions, chilies, and tomatoes, and cook for an hour until tender.
Step 3 : Once ready, add vegetables in small pieces, ground oregano, eggs, cilantro, and finally, orange juice.
Step 4 : Lastly, let it cook for a few minutes.
Step 5 : For the meatballs, cook the breast, shred it, and add it to the broth along with chicken.
Step 6 : Knead well and form balls, which are added to the boiling soup and left to cook for about 15 minutes.
