Chicken Soup with Meatballs
Ingredients
1 ½ kilogram of Chicken pieces
2 Eggs
4 Corn
2 Chayotes
4 Tomatoes
4 Yuca chunks
2 Green plantains
3 Garlic
2 Onions
2 Sweet peppers
1 Cilantro sprigs
¼ tablespoon of Ground oregano
4 Sour oranges
1 tablespoon of Achiote
1 pinch of Salt
½ kilogram of Cascading corn masa
1 Shredded chicken breast
½ Onion
½ Chili pepper
3 Herb sprigs (good herb)
1 tablespoon of Achiote
Salt and butter
1 pinch of Pepper
Preparation
Step 1 : To prepare the broth, start by washing the chicken and cutting it into pieces.
Step 2 : Then, place it in a pot over medium heat with salt to taste, achiote, garlic, onions, chiles, and tomatoes, cooking for about an hour until tender.
Step 3 : Once ready, add small pieces of vegetables, ground oregano, eggs, cilantro, and finally, orange juice.
Step 4 : Lastly, let it cook for a few more minutes.
Step 5 : For the meatballs, cook the chicken breast, shred it, and add it to the broth along with the chicken.
Step 6 : Mix well and form small balls, which are added to the boiling soup and cooked for approximately 15 minutes.
