Ingredients

1 pound of Soy (payana)

1 Large onion

4 Small bell peppers

1 teaspoon of Cumin

1 pinch of Achiote

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : First, wash the soy and let it drain.

Step 2 : Next, add 4 liters of water and stir well.

Step 3 : Cook the mixture for 30 minutes and then strain, removing the resulting soy payana.

Step 4 : From the soy payana, prepare the chorizo by adding cumin, achiote, onion, chopped bell peppers, salt, and pepper.

Step 5 : Fry the chorizo with oil until golden brown.

Step 6 : Finally, serve accompanied, if desired, with tortillas.
