Soy is washed and drained, then water is added and stirred.
The mixture is cooked for 30 minutes and strained, obtaining the soy payana.
With this base, the chorizo is prepared with spices and vegetables, then fried until golden brown.
The soy chorizo is served with tortillas if desired.
Chorizo de Soya
Ingredients
1 pound of Soy (payana)
1 Large onion
4 Small bell peppers
1 teaspoon of Cumin
1 pinch of Achiote
1 pinch of Salt
1 pinch of Pepper
Oil
Preparation
Step 1 : First, wash the soy and let it drain.
Step 2 : Next, add 4 liters of water and stir well.
Step 3 : Cook the mixture for 30 minutes and then strain, removing the resulting soy payana.
Step 4 : From the soy payana, prepare the chorizo by adding cumin, achiote, onion, chopped bell peppers, salt, and pepper.
Step 5 : Fry the chorizo with oil until golden brown.
Step 6 : Finally, serve accompanied, if desired, with tortillas.
