Ingredients

6 Medium-sized mojarra or guapote fish

6 Plantains

2 pounds of Yuca

2 Large sliced onions

4 Sliced tomatoes

3 Chiltomas (small peppers)

5 Garlic cloves

1 liter of Water

Guineo vinegar

1 pinch of Salt

¼ Cabbage

2 Chopped tomatoes

Vinegar or pickles

1 pinch of Pepper

Preparation

Step 1 : To prepare the fish, it is recommended to clean it beforehand by removing scales and viscera.

Step 2 : Then, it’s essential to wash it thoroughly and refrigerate to marinate for about 8 hours with crushed garlic, salt, and pepper to taste.

Step 3 : When ready to cook, place bijagua leaves on the edge of a large pot, with the pointed side facing outward.

Step 4 : Add yuca in chunks and green plantain, followed by ripe plantain.

Step 5 : Then, place the fish and cover with onion, tomato, and remaining chiltoma slices.

Step 6 : Add salt and half of the remaining leaves in the pot, covering with the thinner leaves to prevent breaking, then cover with a bag or a lid that seals the entire preparation.

Step 7 : Allow it to steam for 20 minutes over medium heat.

Step 8 : For the salad, chop the cabbage and add chopped tomato, vinegar or pickles, and salt to taste, mixing all ingredients.

Step 9 : When serving, it is recommended to arrange the fish with the vegetables and place the salad around this dish.
