Tortas with Ayote Seeds
Ingredients
1 Seasoned ayote
1 pound of Shucked corn
5 Eggs
1 Large onion
4 Large chiltomas
1 pinch of Salt
½ liter of Oil
5 Chicory leaves
1 Small bunch of mint
1 pinch of Annatto
1 pinch of Pepper
Preparation
Step 1 : To prepare this delicious dish, first wash and cut the ayote, making sure to remove the seeds.
Step 2 : Then, wash the seeds and place them in the sun for a day to dry.
Step 3 : Subsequently, brown them in a saucepan, let them cool, and grind them to obtain a seed powder.
Step 4 : In a separate pot, boil the corn and then grind it to obtain the dough.
Step 5 : Next, mix the corn dough with the ayote seed powder.
Step 6 : Add the chopped eggs, onion, and chiltoma, annatto, and salt to taste, and mix everything well.
Step 7 : Form tortas with the mixture and fry them in very hot oil until golden brown.
