Vigorón with cabbage salad
Ingredients
1 kilogram of Pork cracklings
2 Garlic cloves
1 Sour orange
Pork lard
½ kilogram of Cabbage
250 grams of Tomato
Salt and vinegar
1 kilogram of Yuca
Preparation
Step 1 : Peel and wash the yuca, cut it into pieces, and boil in plenty of water until tender.
Step 2 : Then remove from the water and let it cool.
Step 3 : Cut the pork cracklings into pieces and marinate them with the juice of sour orange, garlic, and salt for 1 hour.
Step 4 : Drain the pork cracklings and fry them in plenty of pork lard over high heat, stirring continuously until golden.
Step 5 : Remove with a slotted spoon and set aside.
Step 6 : Finely chop the cabbage, cut the tomato into small squares, and add the pork cracklings.
Step 7 : Mix everything together and season with vinegar and salt.
Step 8 : Place the prepared mixture over a bed of yuca.
