Yuca Cakes Stuffed with Meat
Ingredients
3 pounds of Yuca
1 pound of Pork, beef, or chicken
5 Eggs
1 pinch of Salt
½ liter of Oil
1 Large onion
3 Green bell peppers
1 pinch of Pepper
Preparation
Step 1 : Wash the yuca with water before removing the skin and cutting it into medium pieces.
Step 2 : Then, cook it for about 45 minutes and let it cool before mashing it with a fork in a bowl.
Step 3 : On the other hand, cook the meat with onion and bell pepper until tender, adding salt and pepper to taste.
Step 4 : Shred the meat when cold.
Step 5 : In a pan with oil, fry the onion and bell pepper, then add the meat and cook for 5 minutes before letting it cool.
Step 6 : Beat the eggs in a bowl and set aside.
Step 7 : Mix the meat with the yuca dough and form small empanadas or cakes with your hands.
Step 8 : Heat oil in a pot and, when hot, dip the cakes in the beaten eggs and fry until golden brown.
Step 9 : Drain the fried empanadas on a paper towel or colander and serve with pico de gallo or guacamole sauce.
