Candied Watermelon Rind
Ingredients
1 pound of Sugar
2 Watermelons
2 Cinnamon sticks
3 Cloves
Raspberries
Preparation
Step 1 : Cut the watermelon in half and remove the red part with a spoon, leaving only the rind.
Step 2 : Using a knife, remove the green skin of the watermelon, leaving only the white part.
Step 3 : Cut the white part into one-centimeter cubes, then place it in a pot without water and with a lid over medium heat for 40 to 50 minutes.
Step 4 : Once the watermelon rind has formed liquid and starts to soften, add the sugar, cinnamon, cloves, and raspberries.
Step 5 : When the liquid has reduced by half and has the right consistency (semi-soft), it is ready to be enjoyed.
