Ingredients
¼ cup of Water
3 Bundles of dark sugar in pieces
1 teaspoon of Grated ginger
1 teaspoon of Anise
1 teaspoon of Ground nutmeg
1 teaspoon of Ground cinnamon
2 pounds of Fine white corn flour
Preparation
Step 1 : In a pot, combine water and dark sugar, along with ginger, anise, nutmeg, and cinnamon.
Step 2 : Cook over medium heat until the sugar melts.
Step 3 : Gradually add the corn flour, stirring constantly to prevent lumps from forming.
Step 4 : Remove from heat and let it cool slightly.
Step 5 : On a clean surface dusted with corn flour, knead the mixture until it reaches the right consistency.
Step 6 : If needed, sprinkle more corn flour to prevent sticking.
Step 7 : Roll out the dough using dry corn flour until it reaches a thickness of 1 1/2 cm, and let it dry for about 25 minutes in a natural environment.
Step 8 : Once the gofio is dry, trim the edges and proceed to cut strips, giving them the characteristic gofio shape.
Step 9 : Finally, place the gofios in a container previously dusted with dry gofio.
