Ingredients
¾ cup of Water
1 ½ kilogram of White pinol
2 Bundles of grated black sweet
Lemon zest
Ginger
Anise
Ground nutmeg
Ground cinnamon
Preparation
Step 1 : In a pot, put water, sweet, ginger, lemon zest, anise, ground nutmeg, and ground cinnamon.
Step 2 : Cook over medium heat until the sweet melts and the syrup forms.
Step 3 : Then turn off the heat and gradually incorporate the white pinol until a manageable consistency is achieved.
Step 4 : Next, knead to integrate all the ingredients uniformly, sprinkling a little pinol on the work surface.
Step 5 : Continue kneading the gofio dough, adding more pinol and stretching it until it reaches a thickness of approximately 1 cm.
Step 6 : Let the dough rest for half an hour and then cut it as desired.
