Ingredients
1 ½ cup of Maria cookies
½ cup of Toasted almonds
1 Melted butter stick
1 can of Condensed milk
1 cup of Lemon juice
4 Eggs
1 tablespoon of Vanilla essence
4 tablespoons of Sugar
Preparation
Step 1 : To prepare this delicious pie, the first thing you need to do is crush the cookies with the almonds.
Step 2 : Then, pour this mixture into an 8" diameter mold and add the melted butter, making sure to mix well.
Step 3 : Press the mixture into the bottom of the mold and towards the edges to form the base.
Step 4 : Once the base is ready, bake the crust in the preheated oven at 170°C for 8 minutes.
Step 5 : Remove from the oven, keep it on to avoid cooling off.
Step 6 : Meanwhile, in a bowl, mix the condensed milk, lemon juice, and egg yolks until smooth.
Step 7 : Pour this filling over the baked cookie base and bake again for 20 minutes at 180°C.
Step 8 : Once baked, remove the pie from the oven and let it rest for at least 1 hour before decorating.
Step 9 : Meanwhile, prepare the meringue by beating the remaining egg whites until stiff peaks form, then add 4 tablespoons of sugar and 1 tablespoon of vanilla essence, beating for another minute.
Step 10 : Place this mixture in a pastry bag and decorate the pie to taste once it is ready.
