Ingredients
8 Egg whites
1 ½ pound of Sugar
Preparation
Step 1 : In a pot, place the egg whites and sugar, mix with a mixer until stiff peaks form.
Step 2 : Then, place the mixture on the stove over low heat and continue beating.
Step 3 : Once it is hot, remove from heat.
Step 4 : Continue beating on high speed until stiff peaks form.
Step 5 : If desired, add vanilla or food coloring to the mixture for color.
Step 6 : Next, place the mixture in a pastry bag and pipe out shapes of espumillas or suspiros onto a baking sheet lined with parchment paper.
Step 7 : Bake at 150°C for 15 minutes, then turn off the oven and let the espumillas rest for another 15 minutes to prevent deflating.
Step 8 : Once cooled, they can be packed.
