Yuca Fritters

Yuca Fritters

Ingredients

½ kilogram of Yuca

1 cup of Papelon or brown sugar

1 cup of Cream

1 tablespoon of Vanilla

1 teaspoon of Sea salt

100 grams_plural of Feta cheese

Preparation

Step 1 : In a pot, place the yuca with enough water and salt, and let it cook for about 25 minutes, or until it's soft.

Step 2 : Then, remove from the water and place it in a bowl to cool.

Step 3 : In a saucepan over medium heat, place the cup of papelon with 6 teaspoons of water.

Step 4 : Stir until the sugar is dissolved and starts boiling.

Step 5 : At that point, add the cup of cream, continue stirring and add the vanilla.

Step 6 : Remove from heat and add a teaspoon of sea salt.

Step 7 : Remove the inner part or vein of the yuca and place it in a food processor.

Step 8 : Knead with the cheese until a homogeneous mixture is obtained.

Step 9 : Form balls with this mixture.

Step 10 : In a skillet with enough hot oil, fry the balls until they are golden and crispy.

Step 11 : Finally, serve the balls bathed in the previously prepared caramel.
