Ingredients

10 Zapote seeds

3 liters of Milk

2 pounds of Sugar

6 Cinnamon sticks

4 ounces of Calcium hydroxide

Preparation

Step 1 : To prepare the zapote cajeta, first extract the meat from the seed and place it in the sun to dehydrate.

Step 2 : Next, cut it into small, thin pieces, and treat it with calcium hydroxide or ash.

Step 3 : Then wash it thoroughly and boil it in water at least six times to remove the bitter taste.

Step 4 : Drain the zapote and add cinnamon, then finely grind it.

Step 5 : The resulting paste is poured into a pot with sugar and milk, over moderate heat, and constantly stirred for 2 to 3 hours until it thickens.

Step 6 : Once the desired consistency is reached, remove from heat and let it cool, occasionally kneading it to give it the cajeta shape.
