Recipe of Pujagua Atol or Sour Atol, prepared with Pujagua corn, milk, sugar, cinnamon, and sour orange juice. A traditional delight of Latin American cuisine.
Delicious Pujagua corn and milk atol with a touch of sour orange, perfect to enjoy on any occasion.
Atol de Pujagua
Ingredients
1 pound of Pujagua corn
5 cups of Water
¾ cup of Milk
1 ½ cup of Sugar
Cinnamon sticks
2 tablespoons of Sour orange juice
Preparation
Step 1 : Soak the corn for 12 hours.
Step 2 : Then, grind it in a mill without water until you get a fine paste.
Step 3 : In a pot, combine the ground corn with 5 cups of water and stir.
Step 4 : Next, strain the mixture and let the strained liquid rest for 3 hours.
Step 5 : Pour the clear liquid into a pot, add milk, sugar, and cinnamon, and cook until it thickens.
Step 6 : Once the preparation is ready, remove it from the heat, add the sour orange juice, and let it cool before serving.
