Ingredients
1 pound of Meat
3 Plantains
60 grams of Annatto
2 Onions
½ Fresh mint stalks
Lard for sautéing
3 Chiltomas (bell peppers)
2 Tomatoes
3 Garlic cloves
8 Tortillas
4 Sour oranges
Preparation
Step 1 : The beef is cooked in a pot with water, onion, garlic, chiltoma, mint, and tomato for at least 45 minutes.
Step 2 : Reserve the broth to use later.
Step 3 : In a separate container, soak several tortillas with water and grind until obtaining a dough.
Step 4 : Then, shred the cooked meat and fry it with plantains and the dough.
Step 5 : Add the juice of sour oranges.
Step 6 : Place the mixture into the broth and add dissolved annatto in water, salt, and pepper.
Step 7 : Cook until everything is well combined and serve hot.
