Indio Viejo Pinolero

Ingredients

1 ½ pound of Beef steak

3 Medium-sized tomatoes

4 cups of Corn dough

2 Mint

½ tablespoon of Achiote

4 ounces of Sour orange

4 ounces of Butter

2 liters of Water

3 Large chiltomas

2 Medium yellow onions

7 Garlic cloves

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : The meat is washed and boiled with garlic, salt, an onion, and a chiltoma until tender.

Step 2 : Then, it is drained and shredded, reserving the broth.

Step 3 : Next, finely chop the remaining onion, chiltoma, tomatoes, and mint, then sauté them in butter along with the shredded meat.

Step 4 : Dissolve the corn dough in the broth from the meat and add achiote, pepper, and sour orange juice or lime.

Step 5 : Cook the mixture over low heat, stirring constantly.

Step 6 : If necessary, add more water.

Step 7 : When the dough is cooked, add the sautéed ingredients, mix well, and let it rest before serving.
