Nicaraguan Stuffed Chicken
Ingredients
1 Chicken
½ kilogram of Pork meat
5 Potatoes
3 Carrots
3 Onion
3 Chiltomas (bell peppers)
1 Cilantro sprig
4 Garlic cloves
Butter, salt, and pepper
Preparation
Step 1 : In a pot, place enough water and boil the potatoes and carrots until slightly tender.
Step 2 : Meanwhile, in a skillet or saucepan, add enough butter and prepare a sofrito with onions, chiltomas, pork, garlic, chopped cilantro, salt, and pepper to taste.
Step 3 : Once soft, add the previously cooked potatoes and carrots.
Step 4 : Allow to cook on low heat for a few minutes.
Step 5 : Then, stuff the chicken with the prepared mixture and cook it in a pot with enough water and salt until it is ready.
