Ingredients

1 kilogram of Pork meat

1 kilogram of Cassava

1 Carrot

6 Garlic cloves

2 Medium onions

4 Tomatoes

1 Chiltoma

½ Cabbage

½ cup of Vinegar

1 tablespoon of Annatto (Achiote)

1 A splash of oil

1 pinch of Salt

Chagüite leaves

1 pinch of Pepper

Preparation

Step 1 : Cut the pork into pieces and place in a container with vinegar, sour orange juice, onions, garlic, and a tablespoon of annatto to marinate for 2 hours.

Step 2 : Meanwhile, peel and cut the cassava into pieces and cook until tender.

Step 3 : Separately, prepare the salad by slicing the cabbage into fine strips, grating the carrot, dicing the tomatoes, chopping the chiltoma, adding a splash of oil, and seasoning with salt and pepper to taste.

Step 4 : Once the pork has marinated, cook it over low heat for half an hour and serve over chagüite leaves, accompanied by the salad and cooked cassava.
