Ingredients

1 ½ pound of Posta de res

3 Tomates medianos

4 cups of Masa de maíz

2 Hierbabuena

½ tablespoon of Achiote

4 ounces of Naranja agria

4 ounces of Mantequilla

2 liters of Agua

3 Chiltomas grandes

2 Cebollas amarillas medianas

7 Dientes de ajo

1 pinch of Sal

1 pinch of Pimienta

Preparation

Step 1 : Wash the meat and boil it with garlic, salt, one onion, and one chiltoma until tender.

Step 2 : Then, drain and shred the meat, retaining the broth.

Step 3 : Next, finely chop the remaining onion, chiltoma, tomatoes, and hierbabuena, then sauté them in butter along with the shredded meat.

Step 4 : Dissolve the masa in the meat broth and add achiote, pepper, and bitter orange or lemon juice.

Step 5 : Cook the mixture over low heat, stirring constantly.

Step 6 : If necessary, water can be added.

Step 7 : When the masa is cooked, incorporate the sauté, mix well, and let it rest before serving.
