Ingredients

3 Beef tongues

Water

3 Garlic cloves

Oil

2 cups of Homemade tomato paste

1 ½ cup of Cooking broth

2 Bay leaves

Bitter orange juice

1 teaspoon of Sugar

1 pinch of Pepper

1 pinch of Salt

6 Tomatoes in sofrito

Preparation

Step 1 : In a pressure cooker, place the tongue to boil with a little water, garlic and salt for 15 minutes.

Step 2 : Once cooked, remove from the pot and reserve the cooking broth.

Step 3 : Proceed to peel the tongue and cut it diagonally, starting from the widest side.

Step 4 : In a hot skillet, lightly brown the tongue.

Step 5 : Then add a little broth to the sofrito and pour it into the skillet with the bay leaves.

Step 6 : Check the salt level and add bitter orange juice, pepper, and sugar.

Step 7 : Cook until the sauce reduces.

Step 8 : Finally, serve the tongue accompanied with rice and a green salad.
