Nicaraguan Vigorón
Ingredients
1 ½ kilogram of Pork rinds
2 Garlic cloves
2 Bitter orange
Pork lard
1 pinch of Salt
1 kilogram of Green cabbage
300 grams of Tomatoes
Salt, black pepper, and vinegar
1 Cassava
Preparation
Step 1 : In a pot, place the peeled and cut cassava into small pieces with enough water until it is soft.
Step 2 : Meanwhile, prepare the salad by cutting the cabbage into thin pieces and the tomatoes into small squares.
Step 3 : Season with a touch of salt, vinegar, and black pepper to taste.
Step 4 : For the pork rinds, marinate the minced meat in small pieces with the juice of the two oranges, garlic, and salt to taste for an hour and a half.
Step 5 : Then, fry the meat in enough pork lard until golden and crispy.
Step 6 : To serve, place some chayote or banana leaves on the plate, add the cooked cassava, fried pork rinds, and finally, the salad.
