Homemade Milk Cajeta
Ingredients
1 liter of Whole milk
350 grams of Sugar
½ teaspoon of Baking soda
Vanilla
Preparation
Step 1 : High-quality, impurity-free milk should be filtered beforehand.
Step 2 : Then, place it in a pot and heat together with the sugar over medium heat until dissolved.
Step 3 : Add the baking soda and stir.
Step 4 : Cook the mixture for about two hours over low heat, stirring constantly with a wooden spoon to prevent sticking.
Step 5 : During cooking, the water in the milk will evaporate, the liquid will reduce, thicken, and turn color.
Step 6 : The last hour of cooking is the most delicate, as the milk caramel will be thicker.
Step 7 : Continuously stir to prevent lumps or sticking to the bottom of the pot.
Step 8 : Remove from heat when it reaches a solid consistency.
Step 9 : Off the heat, continue stirring for 10 to 15 minutes so the dulce de leche cools slightly and thickens a bit more.
Step 10 : Then add vanilla to taste, whether in extract, essence, or as desired, to add aroma.
Step 11 : Once the dulce de leche has reached a temperature that allows handling without feeling hot, pour into jars and store.
Step 12 : To use immediately as a cake filling, add a layer without pressing too hard to avoid damaging the cake.
