1 Indian chicken
1 pound of Maize
½ pound of Pork lard
Chiltoma
6 Tomatoes
Garlic
1 pinch of Salt
250 milliliters of Sour orange
Achiote
Cilantro
Preparation
Step 1 : To prepare this dish, use maize or corn, preferably maize, which is toasted in a comal over low heat and thoroughly washed.
Step 2 : Once toasted, let it cool and pass it through a hand or industrial grinder without making it too fine.
Step 3 : In a large pot with enough water, add the chicken pieces, pork lard, chiltoma, tomato, garlic, salt, and sour orange to taste.
Step 4 : Optionally, you can add achiote, cilantro, or mint to enhance the flavor.
Step 5 : To improve the taste, it is recommended to use Indian chicken.
Step 6 : Once cooked and seasoned, add the maize dough or ground maize to the pot and stir over low heat until reaching a not-too-thick consistency.
Step 7 : Achiote, cilantro, and mint are optional ingredients and can be added to taste according to individual preferences.
