Ingredients

2 pounds of Chicken

1 Bitter orange

1 Large onion

1 Mint sprig

1 Large chiltoma

1 Large tomato

2 Garlic cloves

1 ½ cup of Corn flour

60 grams of Butter

½ tablespoon of Achiote

1 Egg

1 ½ liter of Water

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a pot with water, salt, and garlic, boil the chicken until thoroughly cooked.

Step 2 : Then, remove the pieces, drain, and shred the chicken.

Step 3 : Half is set aside to make the meatballs, and the other half remains in the broth.

Step 4 : In a skillet with butter, sauté the previously chopped onion, chiltoma, tomato, and mint.

Step 5 : This sauté is then added to the previously prepared chicken broth.

Step 6 : Take the corn flour and mix it with one cup of water, half of the shredded chicken, achiote, egg, pepper, mint, and salt to taste.

Step 7 : Form the dough into meatballs and add them to the broth.

Step 8 : In a small bowl, place a bit of corn dough, achiote, and mint dissolved in some broth.

Step 9 : Add this mixture to the broth to thicken it, along with the juice of the bitter orange.
