Deer Stew
Ingredients
1 Deer or goat chilinco
1 pound of Crushed raw corn
1 Achiote
2 Garlic cloves
1 Onion
1 Large chiltoma (pepper)
½ Orange
1 tablespoon of Cumin
1 pinch of Salt
Spicy pepper
Cilantro for decoration
1 pinch of Pepper
Preparation
Step 1 : The deer or goat chilinco should be washed thoroughly with plenty of water and bitter orange juice.
Step 2 : Then, it is grilled over coals or in a fire.
Step 3 : Once roasted, it is shredded and cooked in 2 liters of water with onion, chiltoma, tomato, chicory, garlic, and achiote.
Step 4 : Cracked corn or a little corn dough is added to the soup, and it is left to boil for an additional 20 minutes.
Step 5 : Finally, it is removed from the heat and served hot with cilantro on top.
