Ingredients

3 ½ pounds of Indian chicken

5 Cloves of garlic, chopped

3 Chiltomas, sliced into rings

1 pound of Onions, sliced into rings

3 Celery stalks, chopped

3 pounds of Cassava, chopped

3 Chayotes, chopped

1 Pumpkin, chopped

3 Corn on the cob, chopped

24 Chilotes

1 pound of Potatoes, chopped

7 Sour oranges

5 liters of Water

1 pound of Cheese

1 pound of Fresh curd

2 pounds of Corn dough

1 Chopped onion

1 Chopped cilantro stems

2 Chopped mint sprigs

1 tablespoon of Achiote

1 pinch of Salt

Preparation

Step 1 : To prepare this delicious chicken soup, start by cutting the chicken into pieces and washing it with sour orange along with the giblets (liver and heart).

Step 2 : Then, marinate everything with achiote, salt, and garlic for one hour.

Step 3 : Once marinated, place in a pot with garlic, onion, chiltoma, and salt to taste, cooking for 45 minutes.

Step 4 : Remove the breast, shred it, and set aside.

Step 5 : Next, add to the broth the cassava, corn, chilotes, pumpkin, chayote, potato, chiltoma, celery, mint, and cook on high heat for 10 minutes.

Step 6 : Then, re-add the chicken pieces and giblets and continue cooking.

Step 7 : To make the meatballs, mix the dough with shredded chicken breast, achiote, curd, onion, chiltoma, cilantro, mint, sour orange juice, salt, and pepper to taste until reaching the desired texture.

Step 8 : Shape into small patties, place grated cheese in the center, seal, and set aside.

Step 9 : For the sauce, mix the dough with achiote, sour orange juice, garlic, and onion, then add to the soup to enhance flavor and consistency.

Step 10 : Bring to a boil for another 10 minutes.

Step 11 : Finally, add the meatballs to the soup and cook at high heat for 15 minutes.

Step 12 : Once ready, remove from heat and serve to enjoy a delicious chicken and meatball soup.
