Ingredients

2 Native chicken

5 liters of Water

1 pinch of Salt

9 Chiltomas

1 Garlic head

4 Tomatoes

9 Quequisques (small plantains or similar)

8 Yuca pieces

10 Chilotes (small green peppers)

4 Corn

1 Onion

1 Cilantro sprig

1 Mint sprig

2 cups of Corn dough

2 Butter sticks

½ Onion

1 Mint herb bunch

½ cup of Sour orange juice

Achiote

Shredded chicken breast

Preparation

Step 1 : Start by thoroughly washing the chicken and cutting it into pieces.

Step 2 : Then, in a large pot, place 5 liters of water, the chicken, salt to taste, the sliced chiltomas, and the garlic head.

Step 3 : Cook the mixture until the chicken softens, which may take between 1 to 3 hours.

Step 4 : Next, add the chilotes and corn to the pot so they can cook as well.

Step 5 : After that, add the quequisques, yuca, sliced onions, sliced chiltomas, bunch of mint, bunch of cilantro, salt to taste, sour orange juice, and achiote to give color to the preparation.

Step 6 : To prepare the meatballs, mix the corn dough with achiote, sour orange juice, salt, chiltomas, chopped onion, butter, and shredded chicken breast.

Step 7 : Form small balls with the mixture and add them to the soup pot.

Step 8 : Cook until the meatballs are cooked through.

Step 9 : Finally, serve and enjoy this Nicaraguan Meatball Soup full of traditional flavors and aromas of the region.
