Oxtail Soup
Ingredients
3 pounds of Oxtail
2 pounds of Beef bone
2 pounds of Cassava
6 Quisquiles
½ Cabbage
3 Sweet corn
8 Chilotes
4 Oranges (juice)
1 pinch of Salt
2 Medium onions
3 Chiltomas
1 Cilantro bunch
3 Ripe tomatoes
1 Chayote
Preparation
Step 1 : To begin, cut the oxtail into pieces and wash the beef bones.
Step 2 : Then, place them in a pot with enough water and a few garlic cloves, bringing to a boil for about 1 hour and adding salt to taste.
Step 3 : Next, wash and peel the chayote, corn, chilotes, quisquiles, and cassava; cut the onion, tomato, and chiltoma into cubes.
Step 4 : Add the vegetables along with the onion, chiltoma, tomato, cilantro, sour orange juice, and a bit of achiote to the cooking of the bones.
Step 5 : Stir well and let the vegetables soften.
Step 6 : Finally, add finely chopped cabbage and cilantro, remove from heat, and serve immediately.
