Revolcado
Ingredients
1 ½ Chopped chicken
1 pound of Parboiled corn
2 Cloves of garlic
3 Medium tomatoes
3 Sprigs of mint
1 Large onion
4 Chicory leaves
1 pinch of Annatto
2 Large bell peppers
6 Oranges (juice)
Preparation
Step 1 : First, in a pot, place the meat (hen for 1 hour or chicken for 30 minutes) along with 2 cloves of garlic, ½ onion, and 1 bell pepper, until it is tender.
Step 2 : Then, remove the meat from the pot and reserve it shredded, as well as the broth.
Step 3 : In a separate pot, boil the corn until soft, then process it and mix the resulting dough with water and add it to the hen broth.
Step 4 : In another pot, fry chopped garlic, onion, tomato, and bell pepper.
Step 5 : Add the shredded chicken and sauté for a few minutes.
Step 6 : Subsequently, add the diluted corn dough in the broth and cook for 20 minutes.
Step 7 : Add annatto, chicory, mint, and salt to taste.
Step 8 : Before removing from heat, add the juice of 1-2 oranges, stir, and serve.
