Rib and Bean Soup
Ingredients
2 pounds of Pork ribs
1 pound of Camaguey beans
1 pound of Tomatoes
3 Bell peppers
1 pound of Onions
1 Head of garlic
12 Chilotes
3 Green bananas
2 Squashes
1 Squash in pieces
2 Sour oranges
½ liter of Oil
1 ½ liter of Water
1 pinch of Salt

Preparation
Step 1 : The ribs are cut into pieces and washed with sour orange and salt.
Step 2 : Then marinate with onion, tomatoes, bell pepper, chopped garlic, and sour orange juice, letting it rest for 24 hours.
Step 3 : In a skillet with oil, sauté the marinated ribs and set aside.
Step 4 : On the other hand, cook the camaguey beans in 1 ½ liters of water for 25 minutes over low heat.
Step 5 : Once soft, add squashes, squash, chilote, and salt to taste, allowing it to boil for 15 minutes.
Step 6 : Add the sautéed ribs, chopped cilantro, bell pepper, and tomato slices to the bean pot and remove from heat.
Step 7 : Green bananas are cooked separately and then served.
