Tripe Soup
Ingredients
3 kilograms of Tripe
5 Tomatoes
4 Chiltomas (sweet peppers)
4 Garlic cloves
3 Annatto seeds
1 Chopped cilantro sprig
3 Squash
2 kilograms of Cassava
1 Cabbage
5 Onions
2 tablespoons of Annatto
6 Corn on the cob
1 kilogram of Cooked rice
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : In a pot with enough water, place the cleaned and small-piece tripe to cook for 2 hours.
Step 2 : Then, add the tomatoes, chiltomas, crushed garlic, chopped cilantro, onions, the tablespoons of annatto, salt, and pepper to taste.
Step 3 : Next, add the vegetables such as squash, cassava, cabbage, corn, and blended rice to thicken the soup.
Step 4 : Finally, it can be served with a touch of lemon.
