Ingredients

1 pound of Bone

2 Onions

1 Celery stalk

2 Sweet peppers

3 Garlic cloves

1 pound of Potato

2 Green plantains

1 pound of Potato

1 pound of Pumpkin

4 Corn on the cob

1 Cilantro sprig

Oil

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : To start, place enough water in a pot and add celery, garlic, and onion, all cut into pieces, along with the bones.

Step 2 : Bring to a boil and simmer for 1 hour.

Step 3 : Then, add all the cleaned and chopped vegetables, and let simmer for 20 minutes.

Step 4 : In a separate skillet, sauté onion, garlic, chili, and cilantro in oil.

Step 5 : Add this sofrito to the bone broth and vegetables, and cook for 7 minutes.

Step 6 : When the broth reduces slightly, adjust the salt and pepper to taste.

Step 7 : Finally, serve the broth with vegetables, sprinkle fresh cilantro on top, and if desired, serve corn tortillas as an accompaniment.
